Happy Seafood Valentine’s Day!

A trip to Sprouts Farmers’ Market the other day firmed up my Seafood Valentine’s menu. And the winner is…..Grilled Scallops! Look at this beautiful display and you’ll understand why I couldn’t resist. Here’s the plan: skewer scallops and secure the end with a small, raw potato to avoid losing any. Trust me on that one! Brush with EVOO and sprinkle with seasoned salt and paprika, easy easy. Serve with grilled broccolini and place scallops atop sautéed zoodles, my fav new vegetable. I like to toss the zucchini noodles with chipotle olive oil and add sundried tomatoes and chopped olives. Most of all, have fun with the food and the result will be delicious!
