Ingredients

  • 4 eggs
  • 1/2 cup flour
  • 1/3 cup oats, old fashioned
  • 1/2 cup milk, any kind
  • 1 teaspoon vanilla
  • 4 tablespoons butter
  • 2 tart apples, peeled and thinly sliced (may substitute 2 bananas)
  • 1/2 cup slivered almonds
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 1/2 teaspoon salt

 

Method

Step 1

In a blender, whisk eggs until blended. Add in flour and oats, mix. Then add in milk and vanilla, blend. Set aside.

Step 2

In a 10" ovenproof skillet, melt the butter and saute the apples and almonds. Add cinnamon, sugar and salt, cook until apples soften and almonds appear toasted.

Step 3

Heat oven to 450 degrees. Pour egg mixture over the top of apples and bake for 20 minutes.

Step 4

Serve with maple syrup, fresh lemon juice and/or powdered sugar sprinkled on top.
