Ingredients

  • 1 sheet of Puff Pastry (1/2 package)
  • 2 T. milk
  • 1/2 cup apricot preserves or raspberry jam
  • 2 squirts of Chipotle Tabasco, optional
  • 1/3 cup dried cranberries or currants
  • 1/4 cup toasted almonds,sliced or pecans, chopped
  • 1 1-lb. wheel of Brie, untrimmed
  • 3 hard apples sliced
  • crackers of choice

Method

Step 1

Thaw pastry sheet in refrigerator overnight, unfolding before it gets to room temperature and sticks together. Heat oven to 400 degrees.

Step 2

Place pastry onto a non-stick surface and roll with rolling pin larger and flatter into ~14" square.

Step 3

Mix chipotle tabasco into fruit if using. Place preserves in a small mound in the center of dough square, then add nuts and dried fruit to the mound. Place cheese on top of it and gently press down so that jam spreads to the edges of the cheese.

Step 4

Take each corner and bring to center, overlapping to enclose cheese. If a shape is desired to decorate the top, trim some of the excess dough off while wrapping it up. Flip bundle over and place seam side down in a pie dish.

Step 5

Roll excess dough flat and use cookie cutter to create desired shape. Place on top.

Step 6

Brush top of pastry with milk.

Step 7

Bake 20 minutes until golden, let sit for one hour. Serve with crackers and apples.
