Broccoli Salad

Ingredients

  • 1 bunch fresh broccoli
  • 1/2 pound bacon or bacon bit equivalent
  • 1/2 medium red onion, chopped
  • 1/2 cup raisins
  • 1 cup whole cashews or almonds
  • 1 cup light mayonnaise
  • 1/8 cup sugar
  • 4 tsp. red wine vinegar

Method

Step 1

Make the dressing using the mayonnaise, sugar and vinegar, stirring, allowing to sit long enough for sugar to dissolve.

Step 2

Cut washed broccoli into bite-sized pieces, using stems and flowers. Submerge for one minute into boiling water to "take the raw out" and then rinse with cold water until chilled, drain. (This also brings out the pretty green color, win win!)

Step 3

Cut bacon into small pieces and fry until crisp, drain.

Step 4

Combine broccoli, bacon, onion, raisins and nuts in a salad bowl. Toss dressing on salad. Serves 6.
