Chipotle Marmalade Shrimp – Southern Style

Ingredients

  • 1 serving grits, cooked
  • 1 T. butter
  • 1/2 tsp. garlic powder
  • 8 shrimp, brushed with EVOO and dusted with smoked paprika, grilled
  • Chipotle honey marmalade or pineapple habanero sauce
  • 1 tsp. chipotle in adobo sauce, chopped
  • 4-5" cast iron frying pans (from specialty cooking store)

Method

Step 1

First make the grits, then add butter and garlic powder.

Step 2

Spray bottoms of cast iron pans and place a layer of grits in each one, distributing them evenly.

Step 3

Broil briefly while preparing next ingredients.

Step 4

Mix marmalade with chipotle, heat for 30 seconds in microwave.

Step 5

Remove pans from oven, spread marmalade over top of grits, place 2 shrimp in center of each pan on top of marmalade.

Step 6

Serve hot pans on small plate.
