If you love the combination of chocolate and mint, these are for you!

Ingredients

  • 3/4 cup butter
  • 1 1/2 cup brown sugar
  • 2 tablespoons water
  • 12 ounces semi sweet chocolate chips
  • 1 teaspoon vanilla
  • 2 large eggs
  • 2 3/4 cups unbleached flour
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons baking soda
  • 1 9.5-ounce bag Andes® Mint Candies + 10 more mints

Method

Step 1

In a double boiler, melt together butter, brown sugar and water. Add chocolate chips and stir until melted. Remove from heat and allow to cool, add vanilla.

Step 2

In large mixing bowl, combine flour, salt and baking soda. Add chocolate mixture and blend completely. Add eggs and blend. Chill dough thoroughly.

Step 3

Meanwhile, remove all mints from wrappers and cut in half, set aside.

Step 4

Using an ice cream scooper, create small balls by scooping a level scoop of dough and then dividing it into four small balls. Place on ungreased baking sheet. Bake at 335 degrees for 7-9 minutes. Remove from oven and place a mint half in center of cookie. The warm cookie will melt the chocolate. With a butter knife, swirl melted mint to glaze top of cookie.

Step 5

Cool on cooling racks. Makes 99 cookies.
