Chocolate Mint Cookies

Ingredients

  • 3/4 cup butter
  • 1 1/2 cup brown sugar
  • 2 T. water
  • 12 ounces semi sweet chocolate chips
  • 1 tsp. vanilla
  • 2 large eggs
  • 2 3/4 cups flour
  • 1/2 tsp. salt
  • 1 1/4 tsp. baking soda
  • 1 9.5 ounce bag Andes Mint Candies + 10 more mints

Method

Step 1

In a double boiler, melt together butter, brown sugar and water. Add chocolate chips and stir until melted. Remove from heat and allow to cool, add vanilla.

Step 2

In large mixing bowl, combine eggs, flour, salt and baking soda. Add chocolate mixture and blend completely. Chill dough thoroughly.

Step 3

Meanwhile, remove all mints from wrappers and cut in half, set aside.

Step 4

Roll dough into small balls and place on ungreased baking sheet. Bake at 335 degrees for 7-9 minutes. Remove from oven and place a mint half in center of cookie. Return to oven for ten seconds to melt chocolate. Remove from oven and swirl melted mint with butter knife.

Step 5

Cool on cooling racks. Makes 70 cookies.
