Chocolate Zucchini Bundt Cake is both moist and flavorful

Ingredients

  • 2 cups flour (add 2 tablespoons at high altitudes)
  • 2 cups sugar
  • 3/4 cup unsweetened Dutch cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon Saigon cinnamon
  • 4 large eggs
  • 1 1/2 cups coconut oil
  • 3 heaping cups grated zucchini
  • 3/4 cup chopped roasted and salted almonds
  • 3/4 cups semisweet chocolate chips

Method

Step 1

Spray a bundt cake pan and sugar it (sprinkle sugar inside and shake around until it coats the spray.) Heat oven to 350 degrees.

Step 2

Mix the dry ingredients together - flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs, oil, zucchini, almonds and chocolate chips and mix well.

Step 3

Pour into prepared bundt cake pan. Bake 50 minutes or until cake tester comes out clean. Cool and enjoy with coffee or red wine.
