Holiday Fruit Pizza

Just change up the fruit colors to match the appropriate holiday

Ingredients

  • 1 box sugar cookie mix (or make from scratch with favorite cookie recipe below)
  • 8-ounces cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh fruit in blue and red
  • SUGAR COOKIE RECIPE FROM SCRATCH:
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup powdered sugar
  • 3/8 teaspoon salt
  • 1 egg
  • Cream the above 5 ingredients, then add:
  • 1/2 cup oil (coconut oil is really nice)
  • 1 teaspoon vanilla extract
  • 2 cups flour (for gluten free version, use 2 cups gluten free flour and 1/2 teaspoon xantham gum)
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • Refrigerate 8 hours

Method

Step 1

Spread cookie dough flat onto a round, 14" pizza pan covered with parchment paper. Bake at 350 degrees for 15 minutes. Cool. Slide onto a large tray off parchment paper. This works really slick!

Step 2

While cookie is baking, mix together cream cheese, sugar and vanilla until smooth. Spread onto top of cookies.

Step 3

Slice larger pieces of fruit, arrange aesthetically on top of cream cheese. Serve cold.

Step 4

For other times of year, have fun with different fruits. Use kiwis and strawberries for Christmas, kiwis and green grapes for St. Patrick's Day, blueberries and mandarin oranges for a Bronco game....the sky is the limit!
