Ingredients

  • 2 1/4 cups gluten free flour
  • 1/2 heaping tsp. xanthan gum, found at health food store
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup butter, room temperature
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 cups semi sweet chocolate chips
  • 1 cup walnuts, chopped

Method

Step 1

In a small bowl, combine flour, xantan gum, soda, salt and cinnamon. Set aside.

Step 2

In a larger bowl, mix butter, sugars and vanilla. Add eggs. Gradually add flour mixture to this bowl and mix well.

Step 3

Add chocolate chips and nuts.

Step 4

Scoop dough into balls, about the size of a teaspoon, and drop onto ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes, cool on racks. Makes 100 2" cookies
