Greek pasta dish with hints of Italy is a flavorful meal

Ingredients

  • 16 ounces penne pasta
  • 1 1/2 tablespoons butter
  • 1/2 red onion, chopped
  • 2 garlic cloves, minced
  • 4 chicken breasts, boned and skinned, cut into ~1/2"x2-3" slices*
  • 1-14 ounce can artichoke hearts, drained and rinsed, chopped
  • 2 tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 lemons, juiced
  • Zest from one lemon
  • 1 teaspoon oregano, dried
  • Freshly ground pepper to taste
  • Salt to taste
  • 1/2 cup vegetable broth
  • *substitute tofu if a vegetarian dinner is preferred
  • 1/4 cup Kalamata olives to garnish

Method

Step 1

Cook pasta as preferred, set aside.

Step 2

In a large frying pan, saute onion and garlic in the butter, add chicken until cooked through and golden brown. Reduce heat and add artichokes, tomatoes, cheese, lemon juice, zest and oregano. Add pasta and vegetable broth and cook until heated through. Season with pepper and salt as preferred. Garnish with olives. Enjoy!
