Greek Chicken or Tofu Penne Pasta

Ingredients

  • 16 ounces penne pasta
  • 1 1/2 T. butter
  • 1/2 red onion, chopped
  • 2 garlic cloves, minced
  • 4 chicken breasts, boned and skinned, cut into ~1/2"x2-3" slices*
  • 1-14 oz. can artichoke hearts, drained and rinsed, chopped
  • 2 tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 lemons, juiced
  • Zest from one lemon
  • 1 tsp. oregano, dried
  • Freshly ground pepper to taste
  • Salt to taste
  • 1/2 cup vegetable broth
  • *substitute tofu if a vegetarian dinner is preferred

Method

Step 1

Cook pasta as preferred, set aside.

Step 2

In a large frying pan, saute onion and garlic in the butter, add chicken until cooked through and golden brown. Reduce heat and add artichokes, tomatoes, cheese, lemon juice, zest and oregano. Add pasta and vegetable broth and cook until heated through. Season with pepper and salt as preferred. Enjoy!
