Grilled Beets

Ingredients

  • 16 fresh beets
  • EVOO
  • Sea salt
  • Freshly ground pepper
  • Aluminum foil
  • Aged balsamic vinegar

 

Method

Step 1

Cut greens* from beets and reserve for another use. Peel beets and place on a long strip of foil in a puddle of EVOO. Sprinkle with salt and pepper. Seal foil closed.

Step 2

Place on grill on medium heat for 30 minutes or until knife can easily be inserted into a beet. Slice and serve on a bed of spinach or on the sautéed beet greens.

Step 3

Drizzle aged balsamic over the top and serve.

Step 4

*Beet greens are loaded with iron while beets are high in antioxidants, vitamin C and fiber.
