Grilled Squash

  • 4 zucchini or yellow squash (1 per person)
  • ~ 1/4 cup EVOO to brush on
  • Lemon Pepper
  • Garlic Powder
  • Paprika


Step 1

Using a mandolin or very sharp knife, slice thin pieces of squash lengthwise, reserving the ends and pieces that don't stay intact.

Step 2

Spread squash out on a baking sheet and brush both sides with EVOO, then sprinkle both sides with lemon pepper, garlic powder and paprika.

Step 3

Onto very hot grill, place a row of squash at a 45 degree angle and cook for one minute. Reverse the 45 degree angle and cook for one more minute, creating BBQ lines on vegetable. Repeat on other side of vegetable.

Step 4

Arrange aesthetically on a plate in either a herringbone pattern or weave. Beautiful presentation!
