Irish Soda Bread

Ingredients

  • 3 T. butter
  • 2 1/2 cups flour
  • 2 T. sugar
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 cup craisins, raisins or dried fruit of choice
  • 3/4 cup buttermilk

Method

Step 1

Cut butter into flour, sugar, soda, baking powder and salt until resembling fine crumbs. Stir in craisins and buttermilk to make a soft dough. Adjust flour and buttermilk until it all holds together.

Step 2

Turn onto lightly floured board and knead dough until smooth. Shape into a dome and place on greased cookie sheet. Cut an "X" in the center of the loaf.

Step 3

In a 375 degree oven, bake 35 minutes until golden brown. Brush with butter if desired. Wonderful hot or cold, with butter and/or jam.
