Ingredients

  • 5 large oranges
  • 1 small jicama or 1/2 large one
  • 1 sweet onion
  • 1 bunch cilantro
  • 1/3 cup EVOO
  • 1/4 cup white wine vinegar
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. either chipotle powder or ancho chili powder
  • Paprika

Method

Step 1

Peel and section oranges. Peel and slice jicama, julienne style. Slice onion thinly. Combine all three in a bowl.

Step 2

Using kitchen shears, snip half of the washed cilantro into the bowl, mix. In a separate container, mix oil, vinegar, sugar, salt and chili powder of choice. Pour over orange mixture, serve, sprinkling paprika over for aesthetics.
