Ingredients

  • 14 ounces semi sweet chocolate chips
  • 3/4 cup butter
  • 6 large eggs, separated
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 2 tablespoon coconut flour
  • 1/2 teaspoon cayenne (the secret ingredient!)

Method

Step 1

Place chocolate and butter in a double boiler and heat until melted. Remove from heat, mix well and set aside. Remove double boiler from hot water also.

Step 2

Using an electric mixer, whisk egg whites and salt until foamy, then add sugar and mix until peaks form.

Step 3

Quickly stir egg yolks into chocolate mixture until blended. Add coconut flour and 1/2 teaspoon cayenne pepper.

Step 4

Fold chocolate into egg whites and gently blend.

Step 5

Into 12 4-ounce oven-proof ramekins, fill each about 2/3 full of mixture. Cover with plastic wrap and freeze 4 hours.

Step 6

Heat oven to 325 degrees. Set ramekins on a baking sheet, plastic wrap removed, and bake 30 minutes. Let cool 10 minutes before serving. Center will be soft yet cooked with a slightly crackly top.
