Ingredients

  • 1/3 cup poppy seeds
  • 1 cup buttermilk
  • 1 cut butter
  • 1 1/2 cups sugar
  • 4 eggs
  • Zest from one orange
  • 1/2 tsp. vanilla
  • 1/2 tsp. salt
  • 2 1/2 cups flour (+2 T. if at high altitude)
  • 2 tsp. baking powder
  • 1 tsp. baking soda

Method

Step 1

Soak poppy seeds in buttermilk overnight.

Step 2

The next day, cream butter and sugar. Beat in eggs. Stir in orange zest, vanilla and salt.

Step 3

In a separate bowl, mix flour, baking powder and soda. Alternately, add soaked poppy seeds and flour mixture to butter mixture until all combined, mixing until smooth.

Step 4

Pour into prepared bundt cake pan (sprayed with nonstick spray and sprinkled with sugar) and bake at 350 degrees for 35-40 minutes, until a cake tester (or toothpick) comes out clean when inserted into center of cake. Cool on cooling rack, then invert onto cake serving plate.
