Squash and Salmon Roll-Ups

Ingredients

  • 8 medium zucchini, washed
  • 8 oz. Neufchatel Cheese, room temperature, or Mascarpone
  • 1 lemon, zested and juiced
  • 1 T. capers, rinsed and dried
  • 2 T. Deli mustard with horseradish
  • 1/4 tsp. Old Bay Seafood Seasoning
  • 8 oz. smoked salmon, thinly sliced
 

Method

Step 1

Cut ends off zucchini. Using a mandolin, carefully slice squash lengthwise, thin enough that it can be rolled without breaking. Continue until all are sliced. The 2 outside pieces from each one should be set aside for another use.

Step 2

Combine Neufchatel cheese, lemon zest and juice, capers, deli mustard and Old Bay Seasoning.

Step 3

Layer one slice of zucchini, salmon (but not overlapping) and a thin strip of cheese mixture spread the entire length.

Step 4

Start at one end rolling tightly, then skewer with toothpick to hold closed. Enjoy!
