Ingredients

  • 1/2 cup sugar
  • 2 tablespoons finely ground espresso coffee beans
  • 1 tablespoon instant espresso powder
  • 1/2 teaspoon Vietnamese cinnamon
  • 1/4 teaspoon salt
  • 1 egg white, beaten until frothy
  • 5 cups almonds, roasted and salted variety

Method

Step 1

Blend sugar, coffee bean grounds, instant coffee, cinnamon and salt in a bowl.

Step 2

Add the nuts to the egg white and coat well.

Step 3

Add nuts to espresso mixture and coat well.

Step 4

Spread onto jelly roll pan sprayed with cooking spray and bake 5 minutes at 325 degrees.

Step 5

Loosen with spatula and bake another 5 minutes.

Step 6

Loosen again and cool on sheet. Refrigerate in an air-tight container. This makes wonderful gift bundles or a light snack with espresso!
