Ingredients

  • 3 large beets
  • EVOO
  • Salt and pepper
  • 8 ounces goat cheese
  • 1 lemon, zested
  • Cilantro, 1 bunch
  • Mini skewers, 4"
  • Balsamic Vinegar, aged

Method

Step 1

Peel, chop and roast beets in EVOO, salt and pepper in 375 degree oven until soft, about 45 minutes.

Step 2

Meanwhile, form small balls with goat cheese, roll in lemon zest and then in chopped cilantro, skewer cheese with beets, set aside.

Step 3

Drizzle balsamic vinegar on plate, place skewers on top, serve. Make ahead of time and have one less thing to think about at the last minute!
