Zucchini “Pasta”

  • 4 zucchini squash, washed, ends cut off
  • 1/2 cup sundried tomatoes
  • 1/4 cup black olives, chopped
  • Garlic olive oil to taste or Chipotle olive oil to taste
  • Ground pepper and salt to taste



Step 1

Boil salted water in a large pot.

Step 2

Using a Gefu Spiral Slicer, prepare zucchini strips to resemble fettuccine noodles. (available at specialty cooking stores)

Step 3

Into boiling water, drop zucchini and sundried tomatoes and boil for one minute. Drain. Return to pot.

Step 4

Add olives. Add olive oil of choice, salt and pepper, taste, adjust and serve.
