Ingredients

  • 3/4 cup butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup water
  • 1 teaspoon Mexican vanilla*
  • 3 cups Old Fashioned Oats, uncooked
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon soda
  • 1 teaspoon Saigon cinnamon*

Method

Step 1

Preheat oven to 350 degrees. In a large bowl, beat together butter, sugars, egg, water and vanilla until well blended.

Step 2

Add oats, flour, salt, soda and cinnamon and mix well.

Step 3

Drop onto parchment-lined baking sheets by the tablespoon. Bake 10-13 minutes, cool on wire racks.

Step 4

For a change of pace, add nuts, chocolate chips, coconut or craisins. *I love the bold flavors both Mexican vanilla and Saigon cinnamon add. If you don't have a specialty spice store offering these, no worries, just use the best quality cinnamon and vanilla you can find.
