Ingredients

  • Vinaigrette:
  • 1/4 cup EVOO
  • 1/4 cup walnut oil
  • 1/4 cup balsamic vinegar
  • 1 T. shallot, finely chopped
  • 1 T. Dijon mustard
  • 1/2 tsp. freshly ground pepper
  • 1/4 tsp. salt
  • 1/8 tsp. each cinnamon, nutmeg and allspice
  • Salad:
  • 1 10-oz. bag fresh spinach, prewashed
  • 2 medium, firm apples, thinly sliced (sprinkled with lemon juice if sliced in advance)
  • 3/4 cup walnuts, chopped and toasted
  • 1 4-oz. container blue cheese, crumbled

Method

Step 1

Prepare vinaigrette by mixing all ingredients into a covered container. If made in advance, bring to room temperature, whisk or shake.

Step 2

In a large salad bowl, toss spinach greens with vinaigrette until coated lightly.

Step 3

Divide equally onto 8 salad plates. Arrange apple slices, toasted walnuts and blue cheese on top of spinach.

Step 4

Drizzle additional vinaigrette over tops and serve immediately.
