Ingredients

  • 8 skinned and boned chicken breasts
  • 1 cup basil pesto, prepared
  • 8 thin slices cheese (Mozzarella, Jarlsburg, Provolone, for example)
  • 16 julienne slices sun dried tomatoes
  • 16 wooden skewers, 4"
  • Pepper to grind

Method

Step 1

Slice chicken along the longest side, far enough that it can be opened up and spread flat. Pound with meat pounder until it is about 1/4" thick

Step 2

Spread ~2 tablespoons pesto evenly over flattened chicken. Place one slice of cheese over pesto. Place 2 strips of sun dried tomatoes down the center. Now start to roll the chicken up from the cut end. Place 2 wooden skewers into chicken to hold together. Repeat with remaining chicken breasts.

Step 3

Spray glass cooking dish with nonstick spray, then place chicken in dish with rolled side up so pesto does not ooze out during cooking. Spray chicken with oil, grind peppercorns over chicken.

Step 4

Bake uncovered at 375 degrees for 20 minutes/until chicken is not pink when cut into. Rest a minute or two and then enjoy!
