Get in Sync for Cinco de Mayo with this Eclectic Quesadilla & Salsa Recipe

Cinco de Mayo is right around the corner, so what better way is there to enjoy it than with Brie Quesadillas & Peach Salsa? Rhetorical question, I know! This Southwest-inspired appetizer is a favorite any time of year but is especially fun on May 5. Serve with my favorite Margaritas and you will have the best happy hour in a long time…or ever!

This recipe not only explodes with flavors galore, but it also contains my required rule-of-thumb for dishes – have a variety of colors, textures and flavors. Food should be visually beautiful as well as pleasing to the palate. I love it when my guests sink their teeth into one of these treats and their eyes tell all as they savor the bites.

If there needs to even be ONE more reason I convince you that this recipe must be in your back pocket for small plates that delight, here it is: make the salsa and the quesadillas a day ahead. Yes, this will save that valuable last-minute time that we all need. Do the actual cooking of the quesadillas closer to when you serve them and they will be fresh and hot. The salsa can be made the day before and the quesadillas may be assembled the day before as well, covered tightly.
