Happy Easter Frittata!

I  just whipped up the easiest Easter brunch ever – Frittata! I love this dish because it has no crust and makes it easy to “repurpose” last night’s vegetables. It is also the perfect brunch recipe to serve a crowd. All I did was warm up a large Le Creuset Braiser with Chipotle Olive Oil, added vegetables and sauteed them until warm. Next, add any cheese distributed evenly. I used Brie and Pecorino Romano. Whip up enough eggs to cover the vegetables. This is not exact so be creative and have fun with it! Bake at 350 degrees for 30-45 minutes. The vegetables we enjoyed were zoodles, peppers and Brussels sprouts with apples. I served the frittata with Salsa Verde and Chipotle Hot Sauce.  Happy Easter!
