Ingredients

  • 1/2 cup extra virgin olive oil
  • 2 teaspoons salt-free lemon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoky paprika
  • 1/2 teaspoon freshly ground black pepper
  • pinch of Himalayan sea salt
  • 4 cobs of corn, cut in half cross-wise
  • SAUCE:
  • 1/2 cup mayonnaise (I prefer the olive oil one)
  • 2 chopped chipotle peppers in adobo sauce
  • 1 lime, juiced
  • Salt to taste
 

Method

Step 1

Preheat oven to 425 degrees. In a large bowl, mix olive oil, lemon pepper, garlic powder, chili powder, paprika, black pepper and salt.

Step 2

Slice corn lengthwise into half and then cut the halves in half, using a thin, sharp knife. You will end up with 32 "ribs." Toss the ribs into the bowl of spices and mix well, fully coating them.

Step 3

Arrange ribs in a roasting pan and roast for 20 minutes. While the corn is cooking, in a small bowl, mix sauce ingredients until well blended: mayonnaise, chipotle peppers, lime juice and salt.

Step 4

Serve corn ribs on a platter with dipping sauce. Enjoy!
