Date Nut Coffee Bread

Ingredients

  • 1 cup pitted dates
  • 1 cup brewed coffee
  • 1 tablespoon instant espresso coffee powder
  • 2 tablespoons butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose, unbleached flour (add 2 tablespoons at high altitude, you know who you are!)
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped walnuts

Method

Step 1

Preheat oven to 350 degrees. Line a loaf pan, 8x4 inches, with parchment paper. Spray with cooking spray and then sprinkle about one tablespoon of sugar on it to prevent bread from sticking.

Step 2

Into a small, glass bowl, place the dates. In a glass measuring cup, combine the coffee and espresso powder. Heat one minute in microwave. Pour over dates and set aside. Once soft, using kitchen shears, cut each date into about 5 pieces.

Step 3

In a medium bowl, blend together the butter, sugar and egg. Add vanilla.

Step 4

In a small bowl, mix together the baking soda, flour, salt and cinnamon. Add the dry ingredients to the butter bowl and blend. Add walnuts and dates and mix well.

Step 5

Pour batter into prepared loaf pan. Bake for one hour. Remove from oven and cool on metal cooling rack for ten minutes. Then remove loaf from pan and enjoy warm.
