Easy Buckeye Recipe for Ohio State Fans

Ingredients

  • 2 cups creamy peanut butter (not the "natural" type)
  • 1/2 cup salted butter, softened
  • 2 tablespoons brown sugar, packed
  • 1 1/4 teaspoons vanilla extract
  • 3 1/4 cups powdered sugar
  • 12-ounces dark chocolate melting wafers

Method

Step 1

Combine peanut butter and butter in the bowl of a stand mixer and beat until well-combined.

Step 2

Add brown sugar and vanilla extract. Stir well.

Step 3

Gradually add powdered sugar until completely combined. Scoop into tablespoon-sized balls and roll with the palm of your hand until smooth and round.

Step 4

Place on wax-paper lined cookie sheet and freeze for 15-20 minutes.

Step 5

While peanut butter balls are chilling, prepare (melt) your chocolate according to package instructions. Pour into a deep dish or wide cup.

Step 6

Remove peanut butter balls from freezer, spear the top of each one with a toothpick and, holding the toothpick, dip each buckeye ball into the melted chocolate, leaving some peanut butter visible.

Step 7

Return balls to cookie sheet and remove toothpick. Use the pads of your fingers to smooth over the toothpick mark.

Step 8

Allow chocolate to harden before eating and enjoying (in refrigerator.)

Step 9

Buckeye balls are best kept refrigerated.
