Ingredients

  • 16-ounces fresh spinach
  • 1 large Vidalia onion, sliced
  • 8 small tomatoes, sliced
  • 6 large eggs
  • 3-ounces Prosciutto
  • ~5-ounces sliced cheese
  • Butter flavored olive oil
  • Freshly ground pepper
 

Method

Step 1

Preheat oven to 350 degrees. In a large Dutch oven, place spinach and 1/2 cup water. Place lid on and steam on medium-high for 5-10 minutes until wilted. Drain water and place spinach in blender. Blend until liquified. This is your green dye for the eggs.

Step 2

In a medium Le Creuset braiser, sprinkle olive oil across bottom of pan and turn on heat to medium. Add onions and cook until soft. Add tomatoes and cook a couple of minutes. Turn off heat. Add the eggs and spinach and mix well. Layer Prosciutto and cheese on top of egg mixture. Grind fresh over the top generously.

Step 3

Place pan in hot oven and cook for 25 minutes or until center is not jiggly. Remove from oven and allow to rest for at least 5 minutes before cutting. Enjoy with Chipotle tabasco sauce and freshly ground pepper.
