Grilled Vegetables are the Epitome of Summer

This is one of my favorite ways to prepare vegetables that are fresh from the Farmers’ Market…or my sister’s garden! I could not live without this Grilling Basket and get nothing for the endorsement! Have fun with it and change up the veggies and oils every time. Click on the link below to learn the proper flipping technique WITH ‘ove Gloves on! Ingredients

  • 8 bell peppers - 2 red, 2 yellow, 2 orange and 2 green (Feel free to change up the vegetables like I always do...I love to use the equivalent amount of zucchini and onions, for example.)
  • 1/4 cup butter-flavored olive oil (or avocado oil)
  • Salt and Pepper to taste

Method

Step 1

Slice peppers into long slices, removing the stem and seeds in the process.

Step 2

In a large mixing bowl, add the peppers. Sprinkle the oil over the top and toss well. Add salt and pepper to taste and toss again.

Step 3

Heat the grill to 350 degrees.

Step 4

Arrange a cookie sheet (with sides) with the grilling basket on top. Place the vegetables in the basket, secure handle and lid.

Step 5

Place basket on grill and cook for 15 minutes, turning and flipping every 5 minutes to distribute and cook all vegetables evenly. Vegetables will be a little charred and loaded with flavor. Enjoy!
