Ingredients

  • GRAHAM CRACKER CRUST:
  • 6-ounces graham crackers (11 graham crackers)
  • 5 tablespoons melted, salted butter
  • 1/3 cup granulated sugar
  • FILLING:
  • 3 large egg yolks
  • 2 teaspoons key lime zest
  • 1 can (14-ounces) sweetened condensed milk
  • 27 fresh key limes, juiced (2/3 cup)
  • TOPPING:
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Method

Step 1

For the Crust: Preheat oven to 350 degrees. Into the bowl of a food processor, place the graham crackers. Whirl until crumbly. Add the melted butter and sugar and pulse until blended. Press into bottom and sides of a pie dish. Bake 8 minutes until golden. Cool on wire rack while leaving oven turned on.

Step 2

For the Filling: Into a large mixing bowl using an electric mixer, beat the egg yolks and lime zest at high speed until fluffy, about 5 minutes. Gradually add the condensed milk and continue to beat until thick, about 3 - 4 minutes longer. Lower the mixer speed and slowly add lime juice, mixing until just combined. Pour mixture into prepared crust. Bake ten minutes until filling has set. Cool on wire rack, then sprinkle optional zest on top and refrigerate.

Step 3

For the Topping: Into a large mixing bowl, whip the cream and powdered sugar until stiff peaks form. Refrigerate until ready to use. Serve a dollop of whipped cream on top of each piece of pie
