Ingredients

  • 3 large leeks, cleaned and sliced
  • 1 bunch asparagus, ~ 12-ounces, cleaned and trimmed
  • Roasted Almond Olive Oil
  • Aged Balsamic Vinegar
  • Himalayan salt and freshly ground pepper

Method

Step 1

Preheat oven to 400 degrees. Onto a large baking sheet, toss leeks and asparagus in roasted almond oil until coated lightly. Spread out evenly on baking sheet.

Step 2

Place vegetables in oven for 15 minutes. Turn/stir and roast for 15 more minutes.

Step 3

Remove pan from oven and drizzle each individual serving with aged balsamic. Sprinkle with Himalayan salt and freshly ground pepper, if desired. Enjoy this delicious taste of Spring!
