Ingredients

  • 2 tablespoons salted butter, divided
  • 1 tablespoon extra virgin olive oil
  • 1 pound wild shrimp, peeled and deveined
  • 1 lemon, washed and thinly sliced, using a mandolin if possible
  • 1 lemon, washed and juiced
  • 3 garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes
  • Kosher salt
  • 2 tablespoons dry white wine or sherry
 

Method

Step 1

In a large skillet over medium heat, melt one tablespoon butter and the olive oil. Add the minced garlic and stir. Once oil is hot, add shrimp, lemon slices and crushed red pepper flakes. Cook and stir occasionally until shrimp is pink and opaque, about 3 minutes a side. Season to taste with salt.

Step 2

With a slotted spoon, remove the shrimp from heat and keep warm. Into the skillet, stir in the other tablespoon of butter, lemon juice and white wine. Add more salt, if necessary.

Step 3

Serve shrimp and sauce over rice, pasta or my favorite, edamame pasta!
