This is a classic recipe from my childhood with chocolate chips added. Mmmmmmmmm!

 

Ingredients

  • 1/2 cup butter
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg, unbeaten
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unbleached flour
 

Method

Step 1

Preheat oven to 350 degrees. In a large bowl, combine butter, peanut butter, sugar and brown sugar. Mix well. Blend in the egg, vanilla and chocolate chips. Next, add the baking powder and salt and mix well. Gently mix in flour until combined.

Step 2

Chill the bowl of cookie dough for 15 minutes, uncovered.

Step 3

Remove dough from refrigerator and, using a teaspoon, scoop generous spoonfuls of dough onto a cookie sheet. I like to line mine with either parchment paper or a silicon mat. With a large dinner fork, dip into flour and make a criss cross pattern on top of each cookie, pressing down enough to see the imprint. Continue until all the dough has been used.

Step 4

Bake cookies for 9 minutes for slightly chewy, ten if you prefer crunchy. Cool for a couple of minutes on the pan, then transfer to a cooling rack. Store in an air-tight container and keep cool if not enjoying them immediately.
