Prosciutto-Wrapped Grilled Pineapple and Brie a la Food Network

Ingredients

  • Two 1-inch thick slice of fresh pineapple, peeled and cored
  • Sriracha® Hot Chili Sauce, enough for brushing pineapple (my addition!)
  • One 8-ounce wheel of Brie, sliced in half horizontally
  • 6-ounces Prosciutto
  • Sliced apple and crackers for serving

Method

Step 1

Heat grill to 350 degrees. Place 7-inch Le Creuset frying pan on grill rack to heat. Heat another Le Creuset cast iron grill pan on stove to medium heat. Spray pan with cooking spray. Grill pineapple slice for one minute a side or until grill marks are obvious. Set aside.

Step 2

On waxed paper, spread out the slices of Prosciutto to resemble the spokes of a wagon wheel. Place one half of the Brie in the center, skin side touching Prosciutto. Place the pineapple on the Brie, arranging it to cover the cheese. Brush the pineapple lightly with Sriracha® sauce. Cover the pineapple with other half of Brie to resemble a hamburger.

Step 3

Carefully wrap the Brie in Prosciutto until all the cheese is covered.

Step 4

Place Brie in hot sprayed 7-inch pan on grill. Sear each side for 2 1/2 minutes until Prosciutto is slightly crisp. Serve in hot pan with apple slices and crackers.
