Pumpkin Bread with Chocolate Chips and Walnuts – Perfect for Fall

Ingredients

  • 4 large eggs
  • 2 cups granulated sugar
  • 15-ounces pure pumpkin
  • 2/3 cup water
  • 1 cup avocado oil
  • 2 1/2 cups unbleached flour (at high altitudes, add 2 tablespoons. You know who you are!)
  • 1 cup old fashioned oats
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon each cloves, cinnamon and nutmeg
  • 1 cup chopped walnuts
  • 1 cup semi-sweet chocolate chips

Method

Step 1

Heat oven to 350 degrees. In a large bowl, combine eggs, sugar, pumpkin, water and oil.

Step 2

In a medium bowl, combine flour, oats, baking powder, baking soda, salt, cloves, cinnamon and nutmeg. Blend in walnuts and chocolate chips.

Step 3

Add dry ingredients from medium bowl to large bowl, mixing enough to blend but do not over mix.

Step 4

Prepare two loaf pans with parchment paper. Spray with cooking spray and then sprinkle lightly with sugar. Divide batter amongst the two pans evenly. Bake for 45-60 minutes. (At 6500 feet, mine were finished at 55 minutes.) Cool on metal racks 15 minutes and then remove carefully from pans. Cool until no longer warm to the touch. Place in air-tight containers and refrigerate until ready to enjoy.
