Happy New Year with Light and Crunchy Shredded Brussels Sprouts Salad

Ingredients

  • 1 cup walnuts, toasted and chopped
  • 1 pound shredded Brussels sprouts
  • Zest and juice of 2 medium lemons
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup extra virgin olive oil
  • 3/4 cup dried cranberries
  • 1 cup crumbly, mild blue cheese (4 ounces)

Method

Step 1

In a glass measuring cup, whisk together the lemon zest, lemon juice, vinegar, honey, salt and pepper. Slowly whisk in the olive oil.

Step 2

Place shredded Brussels sprouts in a large bowl. Pour dressing over top and toss well. Add dried cranberries and toss again. Allow to sit 15-60 minutes. Just before serving, add walnuts and blue cheese and toss gently. Serve at room temperature.
