This delicious watermelon, cucumber and feta salad, adapted from clean food crush, packs in all sorts of surprises. It is a low carb, low cal, recipe with antioxidants and lots of water in the melon and cucumber to keep you hydrated on these hot summer days. The fresh mint adds a nice, refreshing, unexpected delight. And the salad is also pretty! I’m big on presentation since we eat with our eyes first. I added the honeydew melon and blueberries to the original recipe. Use this as a guide and feel free to play with it like I did and keep it eclectic! I might add jicama next time….

Ingredients

  • 1 seedless watermelon, cubed
  • 1/2 honeydew melon, seeded and cubed
  • 1 cucumber, peeled and cubed
  • 8-ounces feta cheese, crumbled
  • handful of fresh mint, chopped
  • 1/2 cup blueberries
  • 2 limes, zested and juiced
  • Freshly ground pepper and Himalayan salt to taste

Method

Step 1

Into a large bowl, add watermelon, honeydew melon, cucumber, feta cheese, mint, blueberries, lime zest and juice and toss gently. Add salt and pepper.

Step 2

Taste, adjust seasonings and enjoy immediately or chill until you need it. Enjoy!
