Happy March 2 Birthday, Dr. Seuss!

Theodor Geisel, aka Dr. Seuss, left his mark on most of us and our children. A favorite of many is his Green Eggs and Ham book. In honor of his birthday it is only fitting to create a dish worthy of this book! My Green Eggs and Ham (Prosciutto) Frittata will hit the spot and help you celebrate this timeless author. Do you like trivia like I do? OK! Dr. Seuss would be 117 this year. Was he really a doctor? No he was not. He came up with the “Dr. Seuss” psyeudonym to appease his father, who expected him to study medicine. Did Dr. Seuss have any biological children to enjoy his books and humor? No he did not but he did have two stepchildren.
