Breakfast/Brunch Burrito on the boat starts the day off right!

Weekends are meant for relaxation, recharging and breakfast/brunch burritos! I love making a nice breakfast/brunch and leisurely enjoying it with my husband. This past weekend I created a winning recipe – Breakfast/Brunch Burrito on the boat, no less! Here’s what you need and please, be creative and think outside the box. Repurposing is the name of the game! Here’s what you’ll need for this easy recipe. Basics: tortillas, eggs-2 per person, cheese, chorizo, tomatillo sauce-I love the Target Archer Farm one, vegetables. Now for the vegetables, simply see what might be hanging around from the night before and go for it! This last time I found sautéed baby potatoes with orange, yellow and red peppers to use as well as an avocado.

Sauté the chorizo until browned. Add vegetables, cheese, eggs and cook until eggs are cooked through and veggies are hot. Warm tortillas up in the microwave wrapped in a damp paper towel. Scoop egg mixture into center of tortilla. Fold sides in, then roll one end toward the other until burrito is sealed. Flip bundle over and place on plate with folded side down.  Place a piece of cheese over top of each burrito and spoon a dollop of tomatillo sauce over. Warm in microwave to melt cheese. Enjoy!
