Hasselback Potatoes make a great meal. Here’s my version-slice potatoes between 2 wooden spoons so as not to cut all the way through. Drizzle with Buttery Olive Oil from The Olive Tap Manitou Springs. Bake at 350 for one hour. Remove from oven and stuff with Buffalo Chicken, cheese, seasoned salt and drizzle Apricot Serrano Barbecue Sauce over the top. Cook for 20 more minutes and enjoy over Zoodles! Change it up every time and have fun! Trivia – the name is Swedish and comes from “Hasselbackspotatis” created in 1953 at a restaurant named “Hasselbacken.”
